It’s definitely a British heritage, from the days when both countries were part of the Commonwealth.

I’ve always identified it as a Eurasian cake, as it’s always something that was around at Christmas time. Not unlike our (British) Christmas cake and Christmas pudding.

However, as with many Singaporean and Malaysian recipes, the “ownership” of kek kukus is also a subject of contention by the various local ethnicities.

Storing and reheating Christmas pudding

After you’ve made your puddings, they’ll benefit a lot from some time to mature. Kind of like humans, ha.

Puddings are traditionally made on the last Sunday in November (stir-up Sunday), but a little later is absolutely fine. They’ll be good to eat a few days after making, but better if you can give them a few weeks.

To age your puddings, wrap them in wax paper and store in an airtight container. If you like a brandy or liqueur-soaked pudding, unwrap them every few days and brush with a little alcohol to build that depth of flavor (this also helps greatly with their keeping qualities).

If you’re in a warm climate like me, store puddings in the fridge for maturing. In a cold climate they’ll be fine in a cool pantry. And if you’re really getting ahead and need to store them for longer than a few weeks, I’d recommend wrapping in cling film and foil, then freezing, where they’ll happily sit for up to a year.

To reheat, steam individual puddings (uncovered) at 212°F/100°C on your oven’s steam setting for 30 minutes. If you’ve made a larger pudding instead of single serves, you’ll need to steam it for around an hour and a half to two hours (leave it in the pudding basin for this and turn out to serve).


Steamed Fruit Cake

You love a rich fruit cake. You’d like to bake one. But you don’t have an oven. Or your oven’s gone bust. Don’t despair – Steam the cake! With the recipe for the Steamed Fruit Cake you can get an almost similar fruit cake to the baked one. You only need to invest some time!

Steaming Time: 3.5 to 4 hours on med-low heat

  • Dry Ingredients:
    • Maida [APF] – 300 gms
    • Mixed Dry Fruit – 250 gms
    • Cream of Tartar (check notes) – 1 ½ tsp.
    • Soda-bi-carb – 1 tsp.
    • Wet Ingredients:
      • Salted Butter – 250 gms
      • Castor Sugar – 120 gms
      • Eggs – 3
      • Vanilla Essence – 1 tbsp.

      Step 1: Mix all the dry ingredients except the mixed fruit and sieve it. Then add the fruit and mix well (see that all the fruit is well coated with the flour). Leave aside.

      Step 2: Prepare your caramel and keep aside to cool.

      Step 3: Place a steamer with water on heat till it starts steaming.

      Step 4: Whisk the butter, sugar and vanilla essence till creamy. Then add the eggs one at a time and whisk on low speed till well incorporated.

      Step 5: Next add the dry ingredients in three batches and whisk on very slow speed until all of it is used and well mixed (don’t whisk for a long time).

      Step 6: Add the caramel and mix well with a spatula.

      Step 7: Take a 7 inch square pan and line it with parchment or butter paper. Pour the batter into it. Cover the pan with foil and then again with parchment paper. Tie it with a string or a rubber band (You need to cover the baking tin well so that no water drips in during steaming process)

      Step 8: Open the steamer and place the baking pan in it quickly and then cover the steamer. Steam on medium-low heat for 2 hours and then check if there is enough water. If not add more hot water to the steamer. Steam for another 1 ½ hours. Then poke with a skewer to see if coming clean or steam for more time.

      Step 8: Later, remove from the steamer and allow to cool before de-moulding.

      Step 9: Feeding the Cake (optional)

      Spread some foil on a clean surface. Then spread two layers of cling film on the foil. Place the cake on the cling film. Poke some holes into the cake with a bamboo skewer. Brush the top of the cake with the rum. And wrap with the cling film and then with the foil. Put the wrapped cake in an airtight container. Keep away until Christmas.


      Preparation

      Dissolve sugar in a pan at low heat until sugar turn brown. Pour in water and stir for a while before adding butter. Keep stirring until butter dissolved.

      Add in fruit mix, keep cooking until mixture boils. Turn off the heat and set aside (until mixture is warm)

      Gradually add in sieved ingredients, stir well.

      In a separate bowl, beat eggs at high speed for 1 minute. Pour eggs and vanilla flavour into the batter, stir slightly. Do not over stir.

      Pour batter into a 20cm baking pan, steam at medium heat for 2 hours.

      When cake is cooked, open the cover and let the cake cool down in steamer.

      Remove cake from pan when it is properly cooled down.

        Steamed Fruit & Nut Rolls -Part 2


        Grabbing the Christmas bug off Rose and her Christmas Cake bake-a-long. I am planning on making my Steamed Fruit n Nut Rolls soon. and thought others might like to make them too. .This is a lovely old skill that I learn't from watching my Nan. Steamed puddings are easy to prepare and not nearly as hard as you may think. .Anyone can join in at any time as soon as they gather their tins, a mesh trivet and the ingredients.

        These are lovely to have on hand, in the freezer for when visiting friends or family. especially leading up to Christmas, if visitors arrive you can pull one out to defrost, while you are chatting and catching up. My Nan made these rolls for over 50 years for the Red Cross fundraising stalls. There are no eggs and no butter, plus they are an excellent source of fibre so try not to eat the whole roll.

        Depending on the season and the climate I recommend to either.
        SERVE SLICED COLD WITH BUTTER OR MARGERINE or
        SERVE SLICED HOT WITH CREAM, ICECREAM OR CUSTARD

        Once you open the Labels pdf.
        You can copy and paste the labels over to a Word document. which will enable you to adjust the ingredients list to suit the fruits and nuts you use.

        This triple recipe fills the 8 tins nicely. reaching right to the top of the tin. that’s why you have to spray the foil lid. While I have everything out. I sometimes make two triple batches. so for my efforts, I end up with 16 rolls in the freezer. A great accomplishment for the day!

        I use 8 tins. because that is what fits in my boiler. My Nan had a larger boiler. which held 9 tins. hence dividing the three mixtures equally. the ones I use are 850mls. you can get them from Berri Apricot Nectar. or Goulburn Valley Pear Juice. or Golden Circle Pineapple Juice. these are the cans I know anyway. the third photo is the cans my Nan used to use. the old steel beer cans.

        Make a mesh trivet to suit the inside base of your boiler.
        Once the tins are clean and dry, store them in a sealed bag.

        You could also check the sizes in other foods. You also need a sturdy mesh plate or cake rack for the tins to sit on in the base of the boiler.

        Allow the rolls to cool fully then wrap them in plastic wrap, adding the label between two layers of the wrap. place a ribbon around them, before storing in the freezer. Hand them out towards Christmas for your family and friends to enjoy.


        Its handy to know you always have something on hand for unexpected visitors. they defrost rather quickly. or if a neighbour is having a hectic time for whatever reason, you could always give them one to say your thinking of them..

        STEAMED FRUIT & NUT ROLLS - THE RECIPE

        I always triple the recipe. In 3 separate bowls prepare each recipe. Three batches fill all the tins in the boiler. I have to divide the triple recipe into 8 tins not 9 because of the size of my boiler.

        1. In 3 separate bowls put………..
        2 cups all bran (home brand is fine)
        Soak in 2 cups milk
        2 dessert spoons golden syrup.
        Soak for at least 2 hours or overnight

        2. While the mixture is soaking I then prepare the other ingredients for later use….
        Into 3 separate medium freezer bags just to save washing more dishes…….
        Add and mix the following into each freezer bag…….
        1 cup sugar
        2 cups plain flour
        2 level tspns bi carb soda
        1 tspn mixed spice
        2 cups of chopped, dried fruit and/or nuts of your choice. chopped).
        1 tspn ground ginger

        I love using apricots, dried apple, dates, cranberries, sultanas, macadamia nuts, walnuts, almonds. I don’t recommend dried banana chips. I also inspect and remove any dried stems left on the sultanas and raisins. Really, you can use whatever you have on hand.

        3. Now take one dry mix and add it to one soaked mix and mix until all is combined.
        Spray the tins and the foil lid.
        Divide the mixture into the 3 tins

        4. Repeat step 3 until all 3 mixtures are used and placed in tins.

        5. Cover with double foil and string. I tie string around the top of the tin then across the top to create a handle for removing them from the hot boiler later.

        6. Cook in boiler using enough water to half cover the tins. Cover and boil slowly for 1 ½ hours. When cooked take out of boiler and remove cake from tin, place on another rack to cool. Cut into slices and enjoy.

        My fam ily and I loves to eat fruit cake (not the fresh fruit cake) but the type of fruit cake more on the drie d mixed fruits and usually the mixed drie d fruits we will soaked in brandy overnight and there after used it to baked. This type of fruit cake is my mother 's favourite ! Just last week my Sister S baked it and I wonder how many slices my mom had eaten!

        And since Christmas is just around the corner, oh, times pass real fast, right, and still going for the festive mood , I have made this Steamed Fruit Cake. instead of baking it for a change!

        Steamed Fruit Cake
        Recipe source from BitterSweetSpicy with slight changes

        A
        250g butter (softened)
        8 0 fine sugar
        1 tsp ground nutmeg
        1/4 tsp orange essence (I didn't add this)
        1 tsp vanilla extract

        B (combined & sifted)
        250g plain flour
        1 tsp baking soda
        1 tsp cream of tartar

        C (combined)
        100g mixed dried mixed fruits
        15 0g dried black currants

        50g dried cranberries
        50g walnuts (chopped into small pieces) , this is optional but I added
        20g plain flour

        D
        200g castor sugar (to caramelized sugar)

        Do you know that Steamed Fruit Cake taste even more better after it has aged for a day or two and even better in a week!

        The first time I made Steamed Fruit Cake was last year, and that recipe only called for 2 hours and 45 minutes and that time I thought it was long steaming and I can't imagine myself that I would go for this recipe for 4 hours steaming !!

        I know 4 hours steaming might sc are you off. unless you have tasted the steamed fruit cake before, else you wil l die die want to make it too ! This is why it prompted me to make this as I have tasted one of the steamed fruit cake previously from a Malay ex-colleague that is soooooo delicious !

        Next time, I will post the bake one. I have to ask my mom or my sister for the recipe f irst.

        I was gonna say I'm so gonna make this, then I saw the FOUR hours of steaming, and i nearly fell off my chair :P now i am sure it tastes fabulous. the cake look so moist and inviting..great shots mel. Now if only i could muster up the patience to do a four hour marathon steaming heehee.

        You could try it over the weekend while you are doing other things. that is the best time to make it. You should give this cake a try. It is absolutely delicious. My mother makes her version and it is simply heavenly!

        Yes, yes, yes some cakes will taste great after aged for a day or two. Like the fruit cake i ever make before, it need to be brush with brandy on the cake and wrap with plastic lining n foil, keep for a week or two.

        Your steamed version look moist n rich. I guess it taste a little fudgy but soft and nice. am I right?

        I really think this fruit cake worth 4 hours steaming time. It looks so moist and delicious! My sister n I were talking about this steam fruit cake the other day . but I think every good bake needs a little effort and love.

        All mixed dried fruit cakes taste so much better after it has aged for days! Steamed version is more on moist in texture and the baked one is a little drier.

        I have never tried steamed fruit cake but yours definitely looks so rich, moist and delicious. Four hours is a long time to steam a cake but if it makes a distinct difference to baked (au baine marie) cake, then it should be worth it.

        I never knew I can do this crazy attempt to steam for this 4 hours long fruit cake too. You can always try my other version which only took 2 hours 45 minutes but of course you can shorten the length of steaming (I cheated that by steaming just 2 1/2 hours!).         I wonder what kind of steam equipment you have to fit this cake. Steaming fish was a little bit tough as I don't own a big cover (I have a big pot but not wide enough). I'm sure you just need to make it smaller to fit in the pan/pot. I love the texture of the steamed cake. Very moist and fluffy. I can totally see this is addicting.         Hi Celina m, you can buy the dried mixed fruit at the shops that sell bakery ingredients or you can mix your own the dried fruits per your preference like currants, raisins, dried orange peel, cherries, etc. I usually chopped small to pieces the dried fruits.
