Blueberry Juice

Ingredients

  • 2 1/2 Cups fresh or frozen blueberries
  • 2 Cups water
  • 1 Tablespoon sugar

Directions

Bring berries, water, and sugar to boil in a medium pot. Turn heat to low and allow to simmer for 10 minutes. Occasionally mash the blueberries with the back of a spoon to release their juices. Pour into a fine-mesh strainer over a container or bowl, pressing the blueberry "pulp" with the back of a spoon until all the liquid is released.

Store in refrigerator up to 3 days, or freeze ¼-cup portions in sealed plastic bags or small plastic containers. Makes 2 cups of Blueberry Juice. This recipe also yields about ¾ cup pulp leftover in the strainer. Save this pulp to add to Purple Purée.

How to Make Blueberry Juice

There are numerous reasons why anything home made is better than something that has been commercially-prepared, especially juices from fruits like blueberries which are packed with a plethora of health benefits and nutritive value. Read on to find out how making homemade blueberry juice is easy and convenient.

Blueberry juice is delicious and even more so when it’s homemade. The fact that the polyphenols found in blueberries can be potentially powerful anti- cancer agents makes blueberry juice all the more in demand. But why buy the bottled, commercially-prepared variety when you can make your very own fresh blueberry juice?


Recipe Summary

  • 3 cups fresh blueberries
  • 3 tablespoons white sugar
  • ⅓ cup orange juice
  • ⅔ cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1 pinch salt
  • ½ cup butter, softened
  • ½ cup white sugar
  • 1 egg
  • ½ teaspoon vanilla extract

Preheat oven to 375 degrees F (190 degrees C).

In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.

In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.

Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

Blueberries are noted to offer the highest amount of antioxidants, compared to other fruits. Aside from fighting free radicals, antioxidants have also been linked to improved overall health.

Lower blood pressure: Studies have found that blueberry consumption is associated with a reduction in blood pressure. After eight weeks of consuming 50 grams of blueberries a day, high-risk heart disease patients experienced four to six percent decrease in blood pressure.

  • ¼ medium red cabbage, sliced
  • 1 large cucumber, peeled and cut into chunks
  • 1 cup fresh blueberries
  • 1 large apple, cut into eighths
  • Ice cubes (optional)

Working in this order, process cabbage, cucumber, blueberries and apple through a juicer according to the manufacturer's directions. (No juicer? See Tip.)

Fill 2 glasses with ice, if desired, and pour the juice into the glasses. Serve immediately.

No juicer? No problem. Try this DIY version of blended and strained juice instead: Coarsely chop all ingredients. First, place the soft and/or juice ingredients in the blender and process until liquefied. Then, add the remaining ingredients blend until liquefied. Cut two 24-inch-long pieces of cheesecloth. Completely unfold each piece and then stack the pieces on top of each other. Fold the double stack in half so you have a 4-layer stack of cloth. Line a large bowl with the cheesecloth and pour the contents of the blender into the center. Gather the edges of the cloth together in one hand and use the other hand to twist and squeeze the bundle to extract all the juice from the pulp. Wear a pair of rubber gloves if you don't want the juice to stain your hands.


Healthy Cancer Fighting Juices:

Blueberry juice:

Blue berry juice is loaded with antioxidants, including chemicals with cancer fighting ability. The anthocyanin in this juice can prevent all types of cancer. Ellegic acid and anthocyanin are the two most effective cancer fighting compounds found in blue berry juice. So, this juice is also good for preventing cancer and to stay healthy. Mangosteen juice is rich in a chemical called xanthone, which has anti-cancer properties. Several researches made have shown that mangosteen juice has the ability to slow down the growth of certain cancer cells.

Noni juice:

Noni juice is regarded as a primary treatment for cancer in the first stage. It helps in killing the cancer cells and stimulating the production of white blood cells in the body. It is also good for enlarging the cell membranes. This way it facilitates the absorption of nutrients that help in fighting cancer.

Pomegranate juice:

Consuming this juice is good for treating various types of cancer, including breast, prostate and colon. It can also inhibit the development of tumour in the body.


Begin by zesting the lemons.

In a small bowl, whisk together the milk, lemon zest, and lemon juice. Let sit for at least 10 minutes while you proceed with the recipe. (It will curdle that’s okay.)

In a medium bowl, whisk together the 2 cups flour, baking soda, and salt.

In a small bowl, toss the blueberries with the remaining teaspoon of flour. Set both aside.

In the bowl of an electric mixer fitted with the paddle attachment (or beaters), combine the butter and sugar.

Beat on medium speed until light and fluffy, 2 to 3 minutes.

Scrape down the sides of the bowl, then beat in the eggs one at a time, beating well after each addition.

With the mixer on low speed, beat in a third of the flour mixture.

Next, beat in half of the milk mixture.

Beat in another third of the flour mixture, then the remaining milk mixture, followed by the remaining flour mixture. Scrape down the sides of the bowl and mix briefly to make sure the batter is evenly combined.

Add the flour-dusted blueberries to the batter and, using a spatula, fold until evenly combined.

Transfer the batter into the prepared pan and smooth the top.

Bake for 50 to 60 minutes, until the cake is golden brown and a tester comes out clean.

Let the cake cool in the pan for about 10 minutes, then turn out onto a rack to cool completely.

When the cake is cool, transfer it to a serving platter and make the glaze. In a small bowl, combine the confectioners’ sugar, lemon zest, and lemon juice.

Add more confectioners’ sugar or lemon juice as necessary to make a thick but pourable glaze (it should be a little thicker than you’d think, about the consistency of molasses or honey).

Spoon the glaze over the top of the cake, letting it drip down the sides.

Let the glaze set for 10 to 15 minutes before serving. Slice with a serrated knife. The cake will keep on the countertop for up to 3 days store in a covered container or wrap in plastic wrap.
