Cut the potatoes into cubes and brown them in a little oil until they turn golden yellow and then take them out on a plate.

In the pan in which the potatoes were browned, add diced tomatoes, chopped peppers, canned tomato paste and a little water, salt, pepper, a pinch of coriander, a pinch of cumin and garlic (lots of garlic). ) cut into slices.

Cover and simmer until tomatoes and peppers are soaked for about 15 minutes.

When the peppers are soaked, add the potatoes to the food, mix, leave together for about 10 minutes on low heat under the lid.

Then break the eggs one by one on top (as many portions as you want so many eggs) and cover and leave on the fire until the eggs are done.

Serve hot with bread. Try it and you will lick your fingers!

Good appetite.
