Muffins with vanilla pudding

A simple but delicious muffin recipe.
I got the pudding idea from Rocsi. (thanks Rocsi) :)

  • 250 g flour
  • 200 g sugar
  • 150 ml oil
  • 50 ml milk
  • 50 g cocoa
  • 4 eggs
  • 1 sachet of baking powder
  • 1 sachet of vanilla sugar
  • a pinch of salt
  • a vanilla pudding by Dr. Oetker
  • 350 ml milk

Preparation time: less than 30 minutes

RECIPE PREPARATION Muffins with vanilla pudding:

Mix eggs with vanilla sugar, sugar, milk and oil until creamy.

Add flour mixed with baking powder, cocoa and salt powder. Mix lightly and prepare the paper muffin tray.

In each form add 2 tablespoons of the composition.

Bake on medium heat for about 20-25 minutes.

The toothpick test is done.

Meanwhile, put the milk on the fire and when it boils, add the pudding.

Scrape the muffins with a spoon in the middle and add the pudding.

Banana muffins with chocolate and vanilla pudding

Start by preparing the puddings to have enough time to cool.

Prepare both puddings according to the indications here: Vanilla pudding, with the quantities given above and with the specification that for chocolate pudding, mix cocoa with starch at the beginning of the recipe.
Leave them to cool for about 2 hours and then beat them well to have a creamy appearance that allows you to fill the muffins.

Then prepare the muffins as follows:

1. Preheat the oven to 180 gr
2. Clean and make a banana paste
3. In a bowl, mix the dry ingredients (flour, baking soda, salt and cinnamon)
4. Beat the butter with the sugar, then add the eggs and vanilla.
5. Start alternately adding the mixture with flour, bananas and yogurt, mixing with a wooden spoon.
6. Pour the dough into muffin tins, lined with baking paper.
* comes out around 15 pieces
7. Bake for about 30 minutes
8. Remove the muffins from the pan and keep them cool on a special wire rack
9. when they have cooled, dig a hole in the top with a teaspoon and fill with chocolate pudding
10. Cover them with vanilla pudding and sprinkle over the crushed biscuits.

ingredients
For muffins :, 3 eggs, 120 gr yogurt, 90 ml oil, 150 gr sugar, 1 tablespoon cocoa, 130-140 gr flour, 1 baking powder, 1 teaspoon rum essence,, Pudding :, 1 sachet of pudding vanilla, 450 ml milk, 3 tablespoons sugar, 1 tablespoon butter, chocolate popcorn for decoration

For the pandispan top, separate the egg whites from the yolk, beat the egg whites with the sugar and vanilla sugar, mix the yolks with the oil and the baking powder quenched in vinegar. With a wooden spoon, mix the yolks over the egg whites from top to bottom, then add the flour. Put half of the composition in the cake tray lined with baking paper, and in the rest of the composition add 2 tablespoons of cocoa. Put the trays in the oven on the right heat for about 40 minutes.
During this time we deal with the cream. In a saucepan, mix the sugar with the flour and vanilla over which we pour the milk, put it on low heat and when it starts to thicken, add the margarine and leave it to mix well for a few more minutes. We give cold cream.

Remove the cakes, let them cool then cut them into three pieces (like a cake), combining the colors, black and white, fill each sheet, and make a glaze on top.
For the icing, mix the sugar with cocoa, water and flour, put it on a very low heat and when it starts to thicken a little, add the margarine, let it boil and leave it to cool. When it is warm, we put it over the cakes. Let it cool for 1-2 hours!

Gently heat the milk in a non-stick pan (ceramic, cast iron). Beat the yolks from the 4 eggs together with the salt and sugar. Sift the flour twice and add it to the above composition. Take a pinch of warm milk and pour over the egg yolks, stirring vigorously. Pour over the rest of the milk on the fire, stirring constantly, at the end add the core of a vanilla pod or vanilla essence extract and the 2 tablespoons of butter. The pudding is ready when it gently folds and makes on top like butterflies :).
