Mustard Crusted Pork with Farro and Carrot Salad

Using a mandoline to slice the carrots turns them into ribbons, and cooking them briefly keeps them from being too crunchy. If you don't have a mandolin, use a vegetable peeler.

Ingredients

  • 1 3-3 1/2-pound boneless pork loin
  • Kosher salt, freshly ground pepper
  • 1 cup whole grain mustard
  • 1/2 cup olive oil, divided
  • 1/3 cup apple cider vinegar
  • 1 tablespoon caraway seeds, coarsely chopped
  • 1 1/2 pounds baby carrots, any color, very thinly sliced lengthwise on a mandoline
  • 1/2 small red onion, very thinly sliced into rings
  • 1 cup (packed) fresh flat-leaf parsley leaves

Recipe Preparation

  • Place pork on a wire rack set inside a large rimmed baking sheet; season all over with salt and pepper. Whisk mustard, mustard powder, and 1/4 cup oil in a small bowl to blend. Rub over pork and let sit at room temperature 1 hour.

  • Preheat oven to 425°. Roast pork until beginning to brown, 25-30 minutes. Reduce heat to 350° and roast until a thermometer inserted in the thickest part registers 145°, 25-35 minutes longer, depending on thickness of roast.

  • Meanwhile, cook farro in a large pot of boiling salted water until tender, 30-35 minutes; drain.

  • Whisk vinegar, caraway seeds, honey, and remaining 1/4 cup oil in a medium bowl; set vinaigrette aside.

  • Heat 2 tablespoons vinaigrette in a large skillet over medium-high heat. Add farro and carrots and cook, tossing often, until carrots soften and farro is warmed through, about 3 minutes.

  • Remove from heat and transfer to a large bowl. Add onion, parsley, and half of remaining vinaigrette; season with salt and pepper and toss to combine.

  • Slice pork. Serve with farro salad. Pass remaining vinaigrette alongside.

  • DO AHEAD: Farro can be cooked 2 days ahead. Let cool, cover, and chill. Reheat before using.

Farro Piccolo Salad

We all know raw or minimally cooked vegetables and whole grains are good for us. Sometimes we hear it so much that mealtime prospects start to seem bleak, almost punitive, and we long for fried bologna and mustard on white. But after we threw this snappy salad together—tiny vegetables and herbs consorting with Anson Mills Farro Piccolo in a bracing vinaigrette—things brightened up. With its flavorful and textural joie de vivre, the farro imbibes a cocktail of light vegetable juices, lemon, and olive oil—with delightful, no-guilt results.

This particular construction could, of course, be applied to a wide range of vegetables (raw or cooked) and to a range of seasons (warm or cool): asparagus, mushrooms, Belgian endive, shredded cabbage, cauliflower, tomatoes, zucchini, wilted greens, could all, in some combination, jump into the fray with delightful results.

When Doc was in medical school we loved to eat at a restaurant called Houston’s in Memphis, Tennessee. Of all the foods they served, the house salad was our favorite! Crisp lettuce sprinkled with bacon and chopped eggs served with house made honey mustard and warm bacon dressings. The honey mustard was divine better than anything you could buy at the grocery store and the warm bacon dressing had just the right amount of sweet and sour. The dressings were served separately with each dressing having its own merits. But when mixed together something magical happened! Enjoy!

Houston’s Salad with Honey Mustard and Hot Bacon Dressings

6 cups spring mix or romaine lettuce
3 hard boiled eggs, peeled and chopped
5 slices bacon, crumbled (save bacon drippings for Warm Bacon Dressing)

Place lettuce in individual bowls. Garnish with egg and bacon. Serve with a mixture of honey mustard and hot bacon dressing. Makes 4-6 servings.

Houston’s Honey Mustard Dressing

1½ cups mayonnaise (I use Duke’s full fat mayonnaise)
¼ cup honey
2 tablespoons prepared yellow mustard
1 tablespoon canola oil
1 teaspoon onion powder
1 tablespoon apple cider vinegar
1 pinch cayenne pepper
1 pinch iodized salt

Combine all ingredients together in a bowl with a wire whisk. Pour into a mason jar. Refrigerate leftovers. Best if served at room temperature.

Houston’s Warm Bacon Dressing

5 slices bacon, cooked and crumbled, drippings reserved
½ cup finely chopped onion
Canola oil mixed with bacon drippings to make ½ cup
½ cup white vinegar
½ cup water
¼ cup granulated sugar
2 teaspoons cornstarch mixed with 2 teaspoons water

Cook bacon and crumble. Set aside. Save drippings. While bacon is cooking, chop onion then process in a mini food processor until minced. Set onions aside.

Pour bacon drippings in a measuring cup and add oil to make ½ cup. Pour oil mixture back in skillet and add onions. Cook onions over medium high heat until translucent. Add vinegar, water, sugar and cornstarch mixture. Cook, stirring constantly until mixture boils and slightly thickens. Remove from heat and pour into a mason jar. Serve warm. Refrigerate leftovers. Heat cold dressing in microwave before using.


Brown Sugar-Mustard Pork Roast with Sauerkraut

1. Preheat oven to 450°. Spray roasting pan with nonstick cooking spray. In small bowl, combine 1/4 cup plus 2 tablespoons brown sugar, mustard, oil, caraway seeds, 1 teaspoon salt and 1/2 teaspoon pepper. Rub pork with brown sugar mixture place in prepared pan. Roast pork 15 minutes.

2. In large bowl, stir sauerkraut, onion, butter, remaining 1 tablespoon brown sugar and 1/2 teaspoon each salt and pepper. Add sauerkraut mixture to roasting pan. Tightly cover pan with aluminum foil. Reduce oven temperature to 350° roast 35 to 40 minutes longer or until internal temperature of pork reaches 145°. Let stand 10 minutes before slicing.

3. Slice pork and serve with sauerkraut mixture.

22 Juicy and Delicious Pork Tenderloin Recipes

The thing about pork tenderloin is that it only sounds fancy. While the tasty cut is indeed often found on four-star restaurant menus, pork tenderloin recipes are actually some of the least intimidating meals people can make at home—no less accessible or convenient than chicken.

“I enjoy cooking with pork tenderloin because it is very easy to find—most retailers offer a wide selection, including pre-seasoned or flavored cuts,” as well as budget-friendly two-tenderloin packages, Cara Harbstreet, M.S. R.D. L.D., of Street Smart Nutrition, tells SELF.

Pork tenderloin is as versatile as it is affordable. “Although it’s lean, it’s a tender cut of meat—hence the name—and can handle a variety of cooking methods,” Harbstreet says. “Grilling, roasting, slow cooking, pan roasting—there is little risk of becoming bored with the same familiar preparations over and over.”

The one thing to be careful of when cooking pork tenderloins is overcooking, which risks drying out the meat due to the lack of fat. You’ll notice that a lot of recipes here recommend marinating the meat (for anywhere from an hour to a day), which helps infuse it with extra moisture as well as flavor. (Always cook pork to an internal temperature of 145 degrees Fahrenheit and rest the meat for three minutes, per the USDA.) Read more tips for juicy pork loin here.

Marinated or not, pork tenderloins are a great centerpiece for a satisfying, balanced meal. “If you prefer the traditional center-of-the-plate type of meal, pork tenderloin can be the star of the show,” Harbstreet says. “Using it as a base for building a complete meal is easy, as it pairs so easily with other ingredients like vegetables, grains or starches, and seasonings.”

Crusty baked cauliflower and farro

I have been thinking about how it might be cool to do a bake pasta dish in which we swap the noodles for farro but leave all the great parts like cheese, so much cheese, chunks of vegetable and, most hopefully, a crunchy lid for years. Years! In that time, I have cooked hundreds of other things, some even not terrible, even, but it took until I handed my husband the latest Ina Garten cookbook and told him to pick out some things we should eat and he pointed to her recipe for crusty shells and cheese that I thought “This!” I last felt this urgently about swapping pasta for a grain when we made this, three and a half years ago.



I should not have waited so long. This was wonderful, a perfect example of the kind of cooking I like best: lots of whole grains and vegetables but no compromises in flavor, texture or a bit of indulgence. Nobody ate this for dinner just because they “should” and not just because half our family is under eight and definitely don’t care about “shoulds” at all.


I made a lot of tweaks along the way. I felt that 3/4 pound of farro to replace the 3/4 pound of pasta called for would be overkill I think most of us prefer it as a chewy accent rather than the body of the dish and used only 2 cooked cups. I found that since I was reducing the volume, I could reduce the cheese and oil too. But I kept all the other ingredients intact — capers and lemon zest and a lot of garlic and sage and parsley — and together this was exceptional, wildly flavorful, weeknight-friendly, vegetable-centric and entirely whole grain that tastes luxurious because did I mention the pockets of ricotta throughout? I did not, but you will not forget them. I almost wanted to call this a good macaroni-and-cheese stand-in but that seems unfair to both dishes, a prescription to make it seem like it’s coming up short when it didn’t taste the way at all.

Crusty Baked Cauliflower and Farro

  • Servings: 6
  • Time: 1 hour
  • Source:A bit liberally tweaked from Ina Garten
  • 1 cup (210 grams) dried farro
  • 3 cups water or broth
  • Kosher salt
  • Freshly ground black pepper
  • Olive oil
  • 2 1/4 to 2 1/2 pound (1 to 1 1/8 kgs) head of cauliflower, cut into small florets
  • 2 tablespoons finely chopped fresh sage leaves
  • 2 tablespoons capers (brine-packed), drained
  • 2 large or 3 regular cloves garlic, minced
  • 1/2 teaspoon finely grated lemon zest
  • Crushed red pepper flakes, to taste
  • 2 cups (6 ounces or 170 grams) coarsely grated, lightly packed Italian Fontina (Val d’Aosta variety, if you can find it) (buy about 8 ounces with rind)
  • 1/2 cup (125 grams) ricotta cheese
  • 1/2 cup (25 grams) panko (plain Japanese-style breadcrumbs)
  • 1/3 cup (30 grams) finely grated pecorino romano cheese
  • 2 tablespoons finely chopped fresh parsley leaves

On the stove: If you plan to cook this on the stove and want to save time, you can presoak the grains overnight in their 3 cups of liquid and they should then cook in only 10 minutes of simmering. Otherwise, simmer the farro in water or broth for about 30 minutes, until quite tender. Drain any excess liquid. Transfer farro to large bowl.

In a rice-cooker: I cook mine on the quick setting and have been very happy with the results. Drain any excess liquid once the farro is tender. Transfer farro to large bowl.

Meanwhile, parcook cauliflower:

In the oven: Heat oven to 425 degrees. Brush a large baking sheet with 2 tablespoons olive oil. Spread florets in one layer, drizzle with 1 more tablespoon olive oil and sprinkle with salt and freshly ground black pepper. Roast for 20 minutes until lightly browned and crisp-tender (they will finish baking with the farro). Reduce heat to 400 degrees.

One the stove: Heat 2 tablespoons olive oil in a large saute pan over medium-high heat. Add half the cauliflower and cook, tossing occasionally, until lightly browned and tender, about 6 to 7 minutes. Add to bowl with farro. Repeat with more olive oil and second half of cauliflower, then add to bowl. Heat oven to 400 degrees.

Assemble casserole: Add the sage, capers, garlic, lemon zest, red pepper flakes, 1 teaspoon salt and 1/2 teaspoon black pepper to cauliflower and farro and stir to combine. Stir in fontina. Transfer half of the mixture to an oiled 10-inch ovenproof frying pan or equivalent baking dish. Dollop rounded tablespoons of ricotta all over. Sprinkle remaining cauliflower and farro over the ricotta, leaving the pockets of it undisturbed.

In a small dish, combine panko with pecorino, parlsey and 1 tablespoon olive oil until evenly mixed. Sprinkle over cauliflower and farro.

Bake casserole: For 20 minutes, until browned and crusty on top. Dig in.

Do ahead: Farro can be cooked up to 3 days in advance, kept in an airtight container in fridge. Cauliflower can be cooked 2 days in advance. Casserole can be assembled and baked a day later, easily, although the crumbs might lose their crisp from absorbing the moisture below if not added right before baking. Casserole keeps for several days in fridge and longer in freezer.
