Cozonac fan

We start with the dough: we put the flour in a bowl with a pinch of salt, separately we make the mayo from the yeast sachet with a few tablespoons of warm milk, a tablespoon of sugar and 2 tablespoons of flour and leave it for approx. 10 min. Meanwhile, beat the eggs with the rest of the sugar.

In the bowl of flour make a hole in the middle and put the yeast, then warm milk and beaten eggs well with sugar and lemon peel. Knead well until you get all the flour incorporated and gradually add the melted butter but not hot. Let it rise until it doubles in volume.

Spread a rectangular sheet of dough and grease the entire surface with margarine and sprinkle with sugar mixed with cinnamon. Then cut the dough into equal squares, but be careful that they are smaller than the tray so that they will grow, put each square on top of each other and place it in the tray, lined with baking paper.

It is good if you have a larger cake pan, I had a small one and piled them up very hard: D After placing in the pan grease the surface with butter and sprinkle a little cinnamon on top. Put the tray in the oven until it browns nicely on top.

I always wanted to try something as a holiday cake. But I would procrastinate every time, telling myself that if he didn't have a nut, he couldn't be good. But here I tried this panettone recipe (a kind of Italian cake) that goes very well as a cake for Easter. And it meets all the requirements of a dukan recipe.

Ingredient:
-4 eggs
- 4 lg oat bran
- 2 lg skimmed milk powder
- 2 lg defatted cheese
- 2 lg cornstarch
- 3-4 lg powder sweetener (to taste)
- 1 lgt baking powder
- vanilla essence
- 4 lg goji
- rum essence
First we put hydrated goji in a little water at room temperature and rum essence. Separate the egg whites and beat them hard with the mixer. In a separate bowl, mix the yolks with the oat bran, milk powder, cheese, starch and powdered sweetener. Add the vanilla essence and baking powder. With a spoon, take the egg white foam and integrate it into the yolk composition and mix well.Drain goji from water and mix them in the main composition. Pour the whole composition into the tray (the round shape of silicone we used, with a diameter of 20-22 cm) and put it in the preheated oven at 180 degrees. Bake for about 35-40 minutes (do the toothpick test).

We take it out of the oven and after 10 minutes we take it out of the tray. We cover it with a light kitchen towel.

It looks great! I can almost taste it, but I have a question. Can it be made without powdered milk? I saw that there is skimmed milk powder on coffee, but the minimum order is 100 lei and I can't buy that much. After all, it's only about two tablespoons, does it really affect the weight loss process if I use commercial milk powder, if nothing else can be done?

Hi. It works without powdered milk. Eventually put another lg of bran in the composition.

If you are from Bucharest you can get directly from their center in Razoare. As far as I know there is no minimum order but the transport is paid. I ordered 2 bags that I have already finished, I ordered two more.

Cozonac fan with apples - Daniela Gherca

First we make the dough: Dissolve the yeast in a teaspoon of sugar and when it has become a paste we turn it over in the bowl in which we put flour, leave it for 10 minutes until it swells a little. Meanwhile, heat the milk with the sugar and vanilla, so that it is warm and the sugar is melted. Beat the egg a little with the salt powder and add it to the flour bowl, add the sweet milk and start kneading a homogeneous and sticky dough, using butter, which we melt, so that it is warm. After we have incorporated it well, we obtain an elastic and easy to spread dough. Let rise until it doubles in volume.

For the filling: Peel the apples, then pass them through a large-mesh grater and boil them together with the sugar and cinnamon until all the apple juice is reduced. Allow to cool, stirring occasionally.

After the dough has risen, we spread it in a rectangular shape and place the filling over it, cut 3 vertical strips, then we put these strips on top of each other and again we cut 6 more times, until we get 6 square-shaped piles.

In a cake pan lined with baking paper, place the piles nicely, leave to rise a little and put the tray in the oven for about 35 minutes or until it is nicely browned on top. Let cool and serve.


Sweet buns with raisins

We prepare the dough with yeast or we can buy it. We cut it into 16 pieces, turn them into small balls and let them rest for 10 minutes, after which we stretch them with a whisk until they are 5mm thick.

Grease each circle with melted butter (in Lent we can grease with apricot jam or vegetable oil). Sprinkle with half a teaspoon of sugar and put the raisins (poppy, cinnamon).

We form a roll from each circle. We fold the rolls in half. We make cuts on rolls leaving a 1cm edge. We form hearts, the roll will open like a fan. We can also form butterflies, for this we will not bend the rolls in two but we will bring the ends to the middle, we will turn the rolls and we will make cuts on both sides leaving 1cm in the middle, we will open the tips and the butterflies will be ready.

Put all the buns in the pan and grease them with egg (in Lent we can grease them with tea infusion).

Put them in the preheated oven at 180oC and bake for 30 minutes.
